Our agaves are 100% Blue Weber, aged 7-9 years, from the rich clay soil of the Highlands of Jalisco, Mexico. Our agave piñas are roasted in traditional brick ovens for 72 hours, while most others steam theirs for 7 hours. Our unique flavor is a result of an 80 hour fermentation process, compared to the average 48 hours. Our Master Distiller uses a special yeast blend resulting in a consistent, refined flavor, unlike the commercial yeasts others use.

Appearance: Crystal clear.

Nose: Hints of citrus & sweet agave.

Palate: Fruit forward with notes of vanilla and grapefruit.

Co-owned by actor George Clooney and nightlife impresario Rande Gerber, this blanco is smooth and light. The aromas are restrained, but on the palate look for mild agave sweetness backed by lemon zest, ginger and white pepper sparks, plus a candied lemon-peel note on the gentle exit.
