The VSOP variant is a vibrant and crisp blend, predominantly crafted from Colombard, Folle Blanche, and Ugni Blanc grapes. The XO and vintage selections further enhance the blend with the addition of Baco grapes.
This composition is distinguished by its subtle wood tannin presence, highlighting key scents of prunes, candied orange peel, and quince. Despite its bold and lively character, it maintains a velvety and sophisticated profile.

Fermentaion
Plate Filtration Process: to ensure optimal quality, the temperature control method involves gradually reducing the temperature to -5°F over the course of one week. Following this, the wine undergoes micron filtration before stabilizing the temperature at 20°F prior to bottling. This meticulous process helps maintain the integrity and characteristics of the wine, ensuring a high-quality end product.
Maturation
Aged for 7 years, this wine was initially matured in new oak barrels for the first 2 years before being transferred to used oak barrels for the remainder of the aging process.
