Chateau Pipeau is a 4th generation estate founded in 1929 in St. Emilion on Bordeaux's right bank where the world's greatest Merlot based wines are made. Winemaker Jean Mestreguilhem, son of the current owners, worked at Chateau de Fieuzal in Pessac-Leognan and Screaming Eagle in Napa Valley before returning to his home estate. There are 25 hectares on day-limestone and deep sand planted to Merlot (90%), Cabernet Sauvignon (5%), and Cabernet Franc (5%) with an average vine age of 40 years. Grass grows naturally between the vine rows; careful debudding and green harvesting limit yields and maximize quality. Canopy management and early harvesting help maintain freshness of fruit. Grapes are sorted first on the vine and then on a sorting table.
Fermentation at low temperature in stainless steel vats is followed by maceration for 21 days with 3 to 4 pump-ovens daily for soft extraction of color and ripe tannins. Every effort is made to limit oxidation throughout the process. The wine is aged in 80% new French oak barrels for 12 months with topping up every 2 weeks and racking every 3 months. Barrels are toasted to varying degrees depending on the character of the vintage. Only one wine is produced at the estate and the same label has been used since 1962, giving the bottle a familiar retro look and fed.
