Set in Stone is cane-pruned, this technique produces smaller berries, less dense clusters, and a more open canopy. The benefit is more even ripening. More black fruit, more depth, and more power is the signature of these much sought after east-facing sites. Aged in 100% French oak for 16 months, 20% new. Gravity racked three times.
Tasting Notes
Deep purple in color & with aromas of red cherry blueberry and black cherry. The mouth is black cherry with a little dark plum. Silky cabernet sauvignon shows balance and complexity. This is wine full-bodied in style, with a punch of power, ripeness, and elegance. A balanced bordeaux style (lower alcohol with great structure), coats the palate in velvety rich flavors. Long, supple tannins. Drink now or over the next 10 years.
